History

Qdoba’s roots can be traced back to the Zuma Fresh Mexican Grill which first opened in 1995. The latter was founded by partners Anthony Miller and Robert Hauser in Denver, Colorado. The partnership began when the two met in New York, while Hauser was studying at the Culinary Institute of America and working at the famous Le Cirque restaurant. The creation of Zuma Fresh was a success, with lines stretching out the door during dinner service. In 1997, the owners were forced to change the name of the restaurant to Z-Teca Mexican Grill due to a lawsuit filed by a Boston restaurant using the Zuma name as well. Various other lawsuits followed still concerning their name change, and so finally, they came up with Qdoba in 1999 to remedy their on-going lawsuits.
